Smothered Chicken Breasts

I used to make these all of the time, they are simple to make and really flavorful. Its probably been over a year since I did these. Boneless Skinless chicken breasts pound down to an even thickness and cut to portion sized pieces, Once cooked top with sauteed onions and peppers and topped with a piece of provolone cheese. Once the cheese is melted they are done.
Served these with some boiled potatoes and sauteed green beans and enjoyed with a few friends.

I will try these for sure. Thanks for sharing. Minus the toppings that's a fairly common meal around here.
 
John, that looks pretty tasty! It would make a killer sandwich on some toasted ciabata bread too I bet...
