Smoked Chuck

So I picked up this lil Chuck thinking it would be 4 hours max. Well after 7 hours at 250, I covered it up and cranked the grill to > 300

I pulled it at 200 figuring it would be tender (no I didn’t probe, it was past 9 PM and I was over it. It tasted good but wouldn’t pass the bendy test, probably would have aced the plank test, lol

Today I cut it up and made a stir fry out of it, and it was great 👍🏻

Yep, smaller ones are more difficult, they just hate cooking within reason!
I think I’d go 275+ and let it ride but, it could still be six hours easily! I’m thinking about one I have in the freezer, I SPOGed one and spun it for about four hours basic indirect so nearer 300-350 (decreasing temp as coals dwindle) for a “Fire’s Out” cook. Turned out pretty well, I think I’ll do a double cook for next weekend, smoke it and braise for Birria burrito bar night with the kids! They are easy, finish the beef off in the crock pot.

I didn’t realize that the smaller, the more difficult, but after you said this, quick search says God’s Truth. I love the flavor of smoked Chuck, the next time I am going to smoke it to 160/170 and then I’m going to drop it in a braise.

I absolutely love the looks of that meal, Chuck. The fried rice had me salivating.

Let it be known.......all my chuck roasts take much longer than I think they will.......cooler time never hurts so I just started getting them on asap in the morning...
I usually go for pulled beef.....leftovers work well too.
