Ribs were on sale so I picked up 4 racks and smoked them too. Will eat a rack on SB Sunday and sacrificed one tonight. The other two will go into the freezer for another date and time. The ribs were seasoned with some Bad Byrons Butt Rub

Great looking bologna and ribs John! What temps did you maintain for the bologna and since I have never tried this, is there an internal temp you are shooting for or just color?
 
Terrific looking baloney and ribs John!
Reminds me, I need to make and an Egg McBob with a thick slab of fried baloney.
