smoked Beefy ribs + cabbage with chicken flaps

cabbage cored then stuffed with seasoned butter

granulated gaaaaalic powder and toasted granulated onion powder in the butter
one rack of beefy ribs halved and on the WSM with pecan wood for smoke

by the way, i use to use a foiled clay saucer inside my foiled water pan... not today. went commando
worked WELL. guess i can toss out the clay saucer. Thank you Marc!

those ribs were marinated over night in Stubbs Beef Marinade. Nothing else added.

after almost five hours at an average temp of 240ºF, the ribs were removed, rested a bit then sliced.

served with OVEN roasted hot wings and the smoked cabbage

although the packers sucked today, the ribs were GREAT, the flaps OK and the cabbage AWESOME!

Nice looking ribs Jim! Super cook! Sorry bout the Pack, I had a similar day! Kept thinking that cabbage was goin to spew some lava(cheese)... Great idea!

Very nice. I never had much luck with smoked cabbage but sounds like I might have been seriously undercooking (and under-buttering) it. Thanks for the inspiration !
