I bought some baby backs and some sausage to cook for dinner

Got this uncooked sausage that's made in a nearby town of Windthorst, Tx. It's really amazing stuff. I'm gonna smoke it!.

Rib's rubbed with my tweaked version of Memphis dust.

WSM 22.5 fired up at 225.

Off the smoker! No wrap. I did carmelize some Head Country sauce on those ribs on the OTG.

The sausage turned out amazing!

All in all it was a great feast. Ribs were bite through, pull off the bone. I might have gone a little longer with these but not much. I smoked them using KBB and pecan wood chunks. Everyone once in a while I love some pecan and it is the Texas state tree!
