skirt steak tacos w/ corn salsa?

cleaned a few red and poblano peppers with a handful of knob onions

added some nopales

the skirt soaked in a fajita style marinade (EVOO, lime juice, soy sauce, cayenne, gaaaalic & pepper)

i remember Tony said his pop poured beer on their beef while grillin'... so i did.

whipped up a salsa using the poblano & red peppers, onions, and the nopales...added corn + more lime juice
should have toasted the flour tortillas, they looked horrible.
made up the tacos with the beef, a little queso fresco, topped with the salsa...

this was pretty good stuff, i added a little hot sauce to my plate for more zing.
The leftover meat was enjoyed this morning over corn flakes
