Skirt Steak Salad on first-generation Genesis

I was lucky enough to find a 1st gen genesis last week, and I've been enjoying it so far.

For lunch I almost ordered pizza but went with a salad & shredded a chicken thigh from the fridge for it, decided to hit that up again for dinner.

Skirt steak with a little Chef Merito's on it for ~15 minutes

400F after a 5 min warmup, it hovered around 450F for the rest of the cook (4 min, flip, 2min add bread, 2 min more take off.... 8 min for the skirt steak)

The dressing was Chef John's Ranch Dressing, but I used dehydrated jalapenos in place of the chives :)

I’m starting to feel much better about the ‘97 maroon head!
Now, I need to find another firebox for the Silver B out on loan.
Just looked at it and there’s a significant amount of damage to repair.
 
Looks excellent Clint. Great looking plate. Can't go wrong with a Chef John recipe on the dressing. Bet that IPA was tasty too.
