This post is about the beef short ribs. The pork ribs were good too. But..the..short..ribs.. Amazing.

Mustard, kosher salt and corse black pepper. Cooked on the WSM 22.5 at about 285 for about 4.5 hours. I know, cook time seems short.. But they came out perfect

Those beef ribs look like you could drain a cup of delicious juices out of them! Great bark and smoke ring as well.
