I have a couple WSM18s and one WSM22, haven't been cooking as much lately. It felt great to do a couple of butts Thursday night. Loaded WSM18 with Kingsford Pro, 5-6 good-sized chunks of hickory, dumped a lit chimney on top of the fuel. Set the cook section on, loaded 1 pork butt per level at 930p, set the Stoker II to 240F and went to bed.
Got up with the sun around 530a, cooker steady at 240F, blower hardly running. Meat was at ~165F, I kicked the Stoker II to 280F. Made breakfast, had coffee, and remembered to check the butts just before 8a, dare I say they were perfect. Got a snapshot and covered them to rest until lunch.
Never refueled, lifted the lid twice. Gotta love the WSMs!
