Simple Meal, Pizza and Shrimp on the OTG

So the CEO and I were childless tonight and decided to make some Pizza. I also picked up some beautiful shrimp from my Fish Monger.

So got the OTG fired up with lump and a few left over coals, first pizza on

First one done, made up by the CEO with some green peppers as a topping and her home made pizza sauce

Some large pink hopper (wild caught) which has marinated for an hour or so in EVOO, Five Spice and crushed red pepper

And I discovered a good way to get the heat up using the OTG or similar in the dome where you need it. My temp went from 480 to 570 doing it and the pizza's cooked pretty quick and nice on top, close the top vent, leave the bottom wide open and crack the dome off the edge a little as the only heat escape. It works well.

Interesting technique Bill. I've cracked the lid before seeking higher temps but I haven't closed the vent. I'll try that next pizza cook.

Your pizza and scrimp look most excellent! Cheers!

BTW I use the fire brick and pizza stone assembly to bake and toast all sorts of stuff besides pizza. To date I've done cookies, toast points, etc.
