Wow, excellent looking cook Enrico! I keep looking for 3+ bone racks of short ribs but all I see are cut into single bones. But now I know how to do them!
 
I think those are the best beef ribs I've seen on the forum. They look outstanding! I'll definitely have to try the butcher paper method. Excellent work.
