Getting ready for the first over-night cook.
Weather isn't too nice, rain now at 39' and snow in tonight's forecast. Have two 7.8 lb butts ready to go and the E-Z UP out of the wind. Had everything set-up on the deck right outside the kitchen patio doors but the west wind and rain forced a relocation to the east-front of the garage. At this time, it's much nicer there.
I'm really <span class="ev_code_RED">fired</span> up about this cook. More so than any other.
Kingsford will be lit in 2 and one-half hours.

Just seasoned the butts with Jane's Butt Rub again and heading out to fire up the schmoker... grab a cold brew an' come along...

Don't let a little weather stop you. We have rain forecasted for Thanksgiving Day here but I'll just put up a shelter out of the wind... Good luck and Happy Thanksgiving.
 
Hey Joe, Happy Thanksgiving to you and your family! I see you've got a lot going on your menu... you'll be busy very soon if not already.
We're just gonna check the WSM once more before a 3-4 hour nap.

Thanks Jim... Will be firing up the 24 x 48 Gator w/ upright, plus my 22" WSM. For reinforcements, if needed, got a 18" WSM, LA CAJA CHINA and several Kettles. I plan to be finished cooking by 3 pm. I too am fired up! One of my sons, my neighbor and his sons are providing the "muscle" since I just had cataract surgery on Monday. So tomorrow I'll be the "EXECUTIVE PITMASTER" LOL

On at 9pm, 1st check at 230am: WSM dome temp at 250 degrees and an internal temp at 182 degrees. Gona remove the butts at 195' and tight foil then cooler them until light to pull them.
It's 3am now, too early or too late for a cold beer?

About an inch of wet snow and seems to be a rain now. It's pretty sloppy out there now.
 
Looking good Jim. I just got up to let the dog out and it seems to be snowing here a bit. Had to check in on your cook!

Happy Thanksgiving,Jim! The EZ-Up is one of the greatest inventions. I've had to bust mine out on several occasions. I'm not getting to use mine today

The final internal temp was hit around the 8th hour, so I took the pork off and wrapped them tight in some foil then putem to bed in a cooler while I took a snooze.
Just finished pulling them after a 2-3 hour rest. Here are some photos.
The weather was a downer, otherwise, it was a great time!
 
If it was'nt for Thanksgiving dinner at our house,I would jump in the suv(appox. 10 miles)and help you PIG OUT!!!!
Congratulations on your 1st BBQ. Looks great. I see you received your Bear Claws,How do you like them?
Since I have not done a butt yet, were you surprised at the short time it took to get to pull temp?(8hrs).
Is there anything else you would do different(other then Weather).

s'ok Mike, yeah, the wheels help sometimes. Most of the time I have them locked. And Happy Thanksgiving Day (evening) to you!

This wasn't my first butt barbecue but my 1st over-night cook. The Bear Paws worked Excellent! worth every penny. A nice size Vac-Packet of pulled pork is my pay-off to the guy that recommended them to me. The cook time was shorter than expected but then every butt I've cooked took about an hour per pound at 240-275 degrees. Do anything different? Yeah, forget the over-night idea (except in summer) and just start it early in the am.
The dish was a success at the inlaws today and I was asked to make it again for the Christmas gathering. Next time, I'll make some slaw to go with it. no one else brought any today.Anyway, enough from me,
