Sesame Oil Chicken (麻油鸡)

I've been wanting to do sesame chicken for a while and experimented once with a honey/sesame oil/salt mixture (it's good!). I found this yesterday I think and thought I'd give it a try.

I followed the ingredients list but the recipe is for a stir fry and I wanted to use the grill instead so I mixed it up a bit.

Instead of fresh ginger (I got some more fresh today) I used powdered ginger, instead of 1.5 cups water I used about 1/4 cup of honey. I used about 1/4 cup sesame oil in the marinade too......

These are 3 split bone-in thighs - -I wanted boneless/skinless thighs but took what they had. (edit: these marinated for nearly an hour - I have another 5 halved thighs still in the marinade)

Flipped at 20 minutes, gave them another 10, then threw on the asparagus (raw, no oil or seasoning) for 3 minutes then pulled everything off.

Sesame Oil Chicken Recipe (麻油鸡)
Ingredients:

3 chicken drumsticks (chop into 3-4 pieces each, bone-in)
2-3 inches knob of ginger (peeled and cut into thin strips)
1 1/2 tablespoon soy sauce
1/2 tablespoon oyster sauce
1 tablespoon Shaoxing wine or Chinese rice wine
2 tablespoons sesame oil
1/2 cup water
3 dashes white pepper powder
Method:

Heat up a wok over high heat and add the sesame oil. When a swirl of smoke appears from the wok and the oil is fully heated, add the ginger strips and stir fry until light brown or aromatic. Add chicken to the wok and stir fry for about 10-15 seconds before adding the soy sauce, oyster sauce, wine, and white pepper powder. Continue to stir-fry until the chicken is 70% cooked. Add water and do a few quick stirs. Cover the wok with the lid and turn the heat to medium to low heat and let the chicken cook for a few minutes or until the sauce thickens and the meat becomes tender. Dish out and serve immediately.

Great looking cook. Oyster sauce is the bomb, so much flavor. I'll be trying this one soon.
 
Looks good Clint, funny Barb and I made a salt free sesame chicken on the grill last night too which was pretty good.
 
Looks like great mines run together Clint, like Rich said we did a sesame chicken last night also. Yours looks delicious but I'm sure that oyster sauce has lots of salt and that makes it hard for us. It sure sound good and the plates is spot on.

I didn't realize how much sodium Oyster Sauce has - 850mg per Tbsp!!! (35% RDA) Luckily that's spread out between 8 split thighs (16 pieces), and being a marinade, not all of it is consumed.

Did you post your cook? I'll check :)

Clint that wasn't the sesame one, we did that last night and Barb will post it today. Oh yeah that south western biscuit dish Barb did in the cast iron pan was remarkable.
 
Here's the rest (5 halved) of the thighs that were in the marinade overnight. Hard to say if any more flavor was imparted, I'm sure it didn't hurt but last nights were just as good IMO.

That's two largish russets cut into ~8 wedges each, tossed in ~2 tbsp evoo & some Penzey's Greek seasoning.
