First off, sorry for the mess up with the first attempt to post this cook.
Anyways...
After seeing a bunch of great Rib cooks the last few weeks especially these ones from Rich I picked myself up two nice racks this week. Did the 3-2-1 style to a tee as the WSM ran between 235 and 255 without me touching it all day.
Here they are waiting to go on.
Here is at the three hour mark taking them off tho wrap.
Here they are after unwrapped waiting to be sauced.
Here is my youngest daughter waiting to sauce them up. She is aways by my side during the cooks.
While the ribs were cooking I worked on makes these potatoes from a recipe Cliff gave me that he made as part of this amazing cook a little while back.
Here is my attempt waiting to go on the kettle.

As the potatoes were finishing up the ribs were sauced and finishing up also.
And they are off.

That was one of my best cooks ever. The ribs were perfect, they were tender with a great bit. I did half a rack in my favorite Zesty Peach BBQ Sauces that I picked up today at the orchard while the ribs were in there first stage of the cook. That potato recipe is legit!!! It will be made again. The kids have requested to add some bacon to the next batch, I may have to give into the request.
