Seafood dinner

We had some family over for dinner tonight.
Served a variety of local seafoods.
Pretty good time.

My brother in law and his wife came from Eastern Canada.
My sister in law came from Vancouver Island.
Our daughter that lives 20 minutes away came too.

The brother in law loves fresh seafood so we do a dinner like this every couple or so years.

This isn’t really oyster season because of the extreme tides so for safety reasons I bbq’ed the oysters this time and they came out amazingly good.

That said,
The tuna was the favorite underdog of the meal.
It tasted great whether it was seared or not so it did not last long at all.

I usually eat the oysters raw with just a squirt of hot sauce so I kinda just winged what I put on the bbq’d ones .
They turned out better than expected.
What I did was,

Drizzle some sweet and spicy Tabasco sauce on them.
Drizzle some habanero mango sauce on them.
Add a small dash of Beaver extra hot horseradish on them.

In a mixing bowl I added and mixed up,
3/4 cup of Gekkeikan Back & Gold Sake.
1TBS Worcestershire sauce
I tsp sesame oil
2 TBS minced garlic

After I drizzled the hot stuff on them I filled them up with the sake sauce.
I then added a bunch of graded parmigiana and topped them off with minced green onions.
I them placed them on the performer until the cheese melted and they boiled/bubbled a bit.

One thing I had to relearn was how to place them on the barbie because the wife wouldn’t let me mess up her nice oyster holder trays.
I ended up making aluminum foil balls to level off the shells and keep the juices in.
This worked surprisingly well.

These oysters in half shells went quick.
I was pretty happy about that because they came from here.
 
I am very familiar with Gekekkain sake.
They are one of the oldest family run business in the world.
I used to know the family member in charge of that facility.
He was my point of contact when I was one of their venders.
Damn nice guy.
It took a while before I knew what his position there was because he was wearing overalls when I first met him.
It was a minor emergency piping issue that needed to be done fast and I fell into that working mano e mano with the old man.
I enjoyed working with them.
