Smoke Day.
St Louis spares, and end pieces from a pork butt that was sliced into pork steaks
It was rubbed, rolled, and tied.

How hot was it in Missouri?
This little fellow dropped in for a sip of my bourbon-ale.

Five hours in, the ribs were ready, but the mini butt was not going to be pullable.
No sweat, we'll have sliced butt.

Ribs served with sauce on the side.

Memorial Day cook.

10 lb. brisket packer barely fitting the 18.5.

Smoked with no pan, etc. at 230 to start, then 300 for about 5 hrs.

At 170 internal the point was removed, and the flat went into a pan with some apple juice.

The point cooked on, while the flat rested.

Sliced flat, point saved for burnt ends.

My family gave everything rave reviews.

My lunch today was leftovers.
The sandwich was sauced sliced pork butt and beef brisket.

Fantabulous cook and photos Bob! And as Don says that is the norm with you! Ribs and pork looked great, but my favorite has gotta be your potato salad, it looks out of this world!

This shot made me nostalgic. I love a good potato salad with egg, but haven't made it in years. Why is that? Food looks great Bob; really delicious. Cheers buddy.

Looks like an outstanding holiday weekend cook! Great stuff, Bob. You should be proud. There's nothing better than cooking great food for the people you love.
