Sausage Minestrone Soup with Orzo

Made another batch of soup this afternoon, this is the third batch I've made in about a month..........must be getting closer to Ski Season!!!! I like soups all the time, but especially in the fall & winter. And spring.

This is another one from The New England Soup Factory Cookbook---- I have a lot of cookbooks for soups, but other than a Clam Chowder recipe from the Lodge Cast Iron Cookbook, this is pretty much my go-to.

I started out with about a pound each of sweet Italian & hot Italian sausage. I pressed it into my 12" lodge CI skillet & onto the grill with a leftover chunk of wood (I think it was apple) wedged on the flavorizer bars:

break it up a little more, cook 4 min, stir, cook 4 min & done:

in with some celery, carrots, summer squash, zucchini, onion, .........orzo, dark red kidney beans, cannelli beans, chickpeas, tomatoes & tomato paste (totally skipped the stock, just went with salt---been doing that with the sausage chili & this soup). The orzo, squash & zucchini went in at the last 15 minutes:

Here's a bowl along with some sourdough baguette - I made extra..... it's at least 2 gallons. That's an earl gray iced tea.... I'm working on cutting the booze out for a little while, trying to get in better shape for the winter.

Very good looking soup that had to be super good. I too am a soup fan. Making soup is my fun thing to do instead of grilling in the winter, inside the nice warm house.
 
Great looking soup Clint. I'm going to check out that book.

Do it - I've only made one recipe I didn't like - it was the Spicy chicken & rice flu chaser soup - don't make it unless you're sick!


My favorites from it:

-Chili Con Carne
-Beef and Barley
-I've made this one (minestrone) at least once before
-Potato, Bacon, & Chive Soup with Horseradish
-a couple of their chowders
-Cauliflower, Potato, & Cheese Soup (I usually go 50/50 with cauliflower & broccoli, but it's good as written - my mom used to make a broccoli soup that we'd eat for a week that I'd get so sick of - now I like it)
-Artichoke Bisque - only made this once

She'll talk up the importance of stocks, but I'll just use bullion & be perfectly happy with it.

The one thing we don't do enough around here is soup. Your soup looks amazing Clint. I too may have to check out that book
 
Awesome soup Clint, its getting to be that time of year. Cool weather means soups on for sure.
