Hey guys! Need some recommendations on a BBQ sauce for spares and baby backs. I've been using Sweet Baby Rays, which is good, but I want to try something different. I tend to like more sweet and spicy and less tangy.
 
I'm not a big fan of commercial sauces, but recently found that SBR makes a few varieties, and our local grocery store (Giant) had them on sale. There's one called "sweet & spicy" you might like. If you like really sweet, there's a "Cola Q", but my favorite is the "Hawaiian Style", but it falls more into the tangy category with a bit of pucker from pineapple juice.

But, when I started making ribs back on my old offset, I'd mix up something new each time. I'd rub them a couple days ahead and use the liquid they left behind as a base. Mix it up with a can of Coke, root beer, or Dr. Pepper, bring to a boil and start throwing in some other flavors to get to where I wanted it. Often a bit of brown sugar, some paprika, granulated garlic, and some lemon or lime juice. I really should have been writing stuff down 'cause a few times it came out really awesome. But it was kind of fun and exciting to try different things all the time.
 
You could always use Harry Soo's doctored SBR recipe if you want something a little bit different. According to the PDF he uses Apple Juice, Pineapple Juice, Agave Nectar, hot sauce and cayenne Pepper to make SBR taste even better.
 
I have made my own sauce and have NO criticisms for those that do. However, I have pretty much settled on Sweet Baby Rays Honey Chipotle sauce for my sauce for most things, including chicken parts. It IS better if it is set with the fire before taking it off the grill/smoker.

One thing you might try with ribs, is to finish the ribs, sauce them just off the smoker, then put them on a pre-heated grill direct to set the sauce. You'll have to watch them close as you can easily burn them, but it DOES add a bit of extra delicious flavor when you get a slight (I emphasize "slight") char. We are talking just a couple of minutes on each side so as not to burn the sauce.

Thanks for the suggestions guys. Does anyone have a base recipe for sauce that I can try? Similar to the Alton Brown method for rubs?

I hate recipes that contain "Best" in the name ;)

This one is sugar free (I'm type 2 diabetic), but it's quite tasty. And, of course, the Sauce Police will never know if you use sugar or honey instead!

There is a sauce I've read on posts here from a member called the No 5 sauce. I haven't tried it yet but I've seen a few threads on the forum about it. Here's the link to the recipe and you can always type in No 5 sauce in the search box to find out more about it.

Harry Soo's Doctored Ray's recipe is quite good. I use Ray's "Sweet and Spicy" as a base. It's a hit with many of my friends. Franklin's Texas Sauce is good too -- especially if you don't like thick and gooey sauces.
