Local market had a sale on Pork loin roasts, so I picked up a small one.
Injected with Stubbs Texas Butter and added my 'house blend' dry rub.
Fired up the kettle with some Kingsford Comp and a couple of apple wood chunks, and set the rotisserie to spinning:
(you might notice that I took a page out of Tony and Maribel's recent post with the
Potato/onion/cheese skillet catching the drippings):
That is one juicy piece of meat:
Skillet potatoes ready to be served:
Ready for me to dig in:
This one is definitely on my list to do again.
