Sambal Chicken

Mr. Lampe posted this cook with a link to the recipe, he made it look so tasty that I thought I would give it a try.

I had to do this cook on Sunday, all we got was rain on Saturday.

My setup; using my performer I used my charcoal baskets to elevate one charcoal grate over another. I then wrapped red clay brick in foil and stacked them for a platform that I will used for the k-bob skews. I got this idea from another member....thank you!

Plated with red quinoa, this recipe is spicy and the quinoa helped mellow the spice out some. A nice lite Sunday meal.

Thank you all for looking. I hope that everyone had a nice safe weekend and that everyone was happy with the football weekend. I would just like to give my college team a huge shout out in that they beat the #5 ranked (at the time) Stanford.

That chicken looks awesome! I love quinoa as well, will have to try this cook out sometime. And congrats to your Utes

Jim...You're being way...way too kind. It didn't look like Madison got much rain during the game, but I'm not sure how far you are away from the college. Again I copied the idea of cooking k-bobs from another member on this site and to me it's easier doing it this way as opposed to pulling them off of the grill grate.

Thank you for sharing the recipe for the Sambal Chicken, the lady of the house rated it an 8.5, but for me it was almost too spicy as I like my flavors to have more than one-note.
