Salmon En Croute and Chicken Thighs

Saw this entree in a weekly grocery flyer and decided to try and make my own.

Made a filling of cream cheese, spinach, dill, capers and a little Cajun seasoning and put it on a couple of puff pastries that I had rolled out enough to cover the salmon.

salmon fillet seasoned with a little more Cajun Seasoning. Egg wash all around the edges to help seal the pastry.

Another batch of smoke almonds on the WSM too for us and some neighbors/friends.

The Salmon En Croute on the grill for about 25 minutes at around 400 dome temp and seasoned with even more Cajun Seasoning.

Normandy veggies cooked on the wok and seasoned with some Cajun Seasoning and finished with a couple of pats of butter.

Plated with all of the above and some white rice with butter and soy sauce. Salmon was a tad overcooked but I was very pleased with my effort. Going to make this again for sure!!

The salmon looks totally marvelous! I must try this. I guess it is possible to make pastries and use this to fill them with.

Not anything wrong with the chicken, either. Scrumptious!
