No, it wasn't homemade horseradish... that would have made it even better! I need to learn how to make that.

So why does meat like this bleed out like this. Mine always does the same and it seems like I'm losing a lot of the moisture. Is it a resting issue or is this just the way it is? Beyond that, it's a little gross. I know what I'm eating, but seeing that on the plate is a little bit too much of a reminder.
