Rosh Hashanah 2023 - it’s about to get real


 
Almost at the finish line.

Challahs have been cooling. Happy with the color and density. Pulled them at 196° and 190°.

Sweet noodle kugel is in the oven. Forgot to grab a pre-cook pic. I think I’m losing my mind.

Chicken soup is up and simmering. Need to make matzoh balls.

Going to check my list to see what I forgot.

Oh, I did make the egg salad this AM. But who needs a pic of egg salad?!?!?!?
 
And I’m done. My feet are screaming at me.

Last item is making matzoh balls. They’re mixed and in the fridge. Will form them in 15 minutes or so.

Off to clean up for dinner. I hope I remember to take slicing pics and dinner service pics.

Brisket #2 is on.

Trimmed, the 14# is 11.5# cook weight. Around 1.5# beef trim into the freezer and the 1# fat being rendered for the wrap.

I used around 65-70% of yesterday’s fuel load. About right for the 14# cook.

Today’s load is mostly KPro with some Cowboy added as the bag was opened. 5 chunks CA white oak below the coals.

Projecting around 5 hours to hit 172° and then 90-110 minutes to get to tender. So around 6.5-7 hour cook based on size (and past experience).

Off to bake more challahs. Everything else is reheat and serve, except the salads which are served cold.

thank you. you're very kind. sometimes it feel like i'm driving a car at 200 mph when making these meals. it all moves by so fast and the pressure is real. and getting it to the table on time, hot and without forgetting a dish i prepared (i have left stuff in the microwave or fridge before) is a challenge. i've implemented a checklist and menu so people can help get stuff to the table in time.
And we forgot new fruits last night. Not the first time we’ve forgotten stuff. And definitely not the last.
