Ribs Two Ways - Jerk and Sweet - - Part 2

Sunday morning and it's time to start the ribs. After a night's rest they're looking ready to go.

Sweet ribs


Jerk ribs


Got the WSM fired up with KBB along with Pecan and Kiawe wood. 48 degrees out, so a little learning curve with getting the temp set right. Got it dialed and put the ribs on - Sweet in the middle.



Wonderful morning drinking coffee in the sunshine with the smoker going.



Three hours down.



Foiled with a mix of Mango nectar and WalkersWood for the Jerk, and plain Mango nectar for the sweet ribs. Unwrapped after two hours - one more to go.



Done and in the house



First slice



Plated simply with store bought slaw and tater salad
