Ribs, take 1

So I got married a little over a month ago, and as a present my best man gave us a 14.5 WSM. I've been grilling for years but never dabbled in the art of smoking. So I read the directions ( for the most part) and got to smoking. Using Stubbs Charcoal and Pecan wood chips I got the ribs to cook but I felt something was off. I realized that I placed the water pan on top of the charcoal (Whoops!). I crisped them on my charcoal grill after cooking them for 6 hours. Sorry for the lack of pics but I was focused on getting them done!


 
Good first smoke on a WSM!
For ribs, I'd adjust the vents to keep the temps between 200-250, then smoke for a total of 4 hours, foiling them midway.
You're gonna enjoy living with that smoker. Uhm, yeah, I mean, congratulations on your wedding!
