Picked up some Shoulder Style Country Ribs at a very economical price. Did a slather of mustard and base rub.
Then I made a mop and used Tootsie’s from Snow’s BBQ mop recipe as a guide but tweaked it a bit.
Set up the WSM for direct heat with some B&B lump and some peach. Added another rub and Got em going at about 250 and mopped every 20 minutes.
We had some crazy wind here so I fought that a bit and had a temp spike. I took them off for a good rest at about 185. The mop was a nice addition and the direct heat gave it a nice smokey flavor.
First baked beans of 2021which were a hit with the kids!
