Picked up some Shoulder Style Country Ribs at a very economical price. Did a slather of mustard and base rub. Added another rub and Got em going at about 250 and mopped every 20 minutes.C6CA64F4-E8EA-4882-A4F9-EAD668F1B01A.jpeg0CE8A057-6820-4B63-B616-FB8FB9EC09CD.jpegWe had some crazy wind here so I fought that a bit and had a temp spike. I took them off for a good rest at about 185. The mop was a nice addition and the direct heat gave it a nice smokey flavor.5526B0A1-5D87-4812-807A-C3B445153D15.jpegFirst baked beans of 2021which were a hit with the kids!
