Made too much food for the initial cook with the vertical rotisserie (http://tvwbb.com/showthread.php?67928-Tacos-Al-Pastor-amp-Vertical-Rotisserie). We've been eating repurposed Tacos Al Pastor several nights this week (not a bad way to go). So Wifey is out of town & I'm batchin. What's a boy to do?
There was some canned pineapple slices in the cupboard, half an onion, some salsa, cilantro & a few slices of the pork. I'm in luck!
The marinated & pre-cooked (we don't do leftovers around here) pork getting some heat for a few minutes per side:
Warmed some tortillas.
Chop Chop!!! Chipotle/tomatillo salsa & cilantro ready & willing.
Time to eat!!!!
