really dumb question about temperature

if a recipe calls for a cooking time of an hour in a 350-degree oven, how long would I cook it in a 250-degree smoker?
 
I not going to have the answer but it seems it would vary based on what you're cooking. Things that have a stall would have a different conversion than something that doesn't. ...and if it has bread or pastry it may not work well at all if it needs the higher heat to get oven spring.

At least 2x (maybe 3x) as long. What others have said is valid too. I always did ribs (usually spares & ~4lb) in a covered roast pan for an hour at 325. Covered/steam environment, they were done in an hour. In the WSM now, 4-5 hr.

They're done when they're done. What and how much are you smoking?

Like everyone has said it depends.... Does the recipe include anything like cook for 1 hour or until skin is crispy or until an internal temp reaches a certain level? I like to go by internal temp as much as possible.
 
If you add a minion start than that usually takes 30 -45 mins to come up to temp with the WSM already loaded. If you wait until you reach target temp, than open the lid and add the dish, whatever you gained is quickly lost.
If your trying to milk the start to add more smoke flavor, I get that,, but I would let the WSM run full bore after a bit to get you closer to 300ish.
I'm with Tony 2 to 2 1/2 hrs from the start up.
So what are you doing, something like a casserole?

IMHO, there are no such things as stupid questions. There are, however, stupid answers. Hopefully, this isn't one of them.

I've been told time and again...it's done when it's done. I've been learning that for pork, for example, it's done when it reaches an internal temp of ____. Ditto for beef, poultry, and whatever else you're cooking or smoking.

So, depending on what's on the cooking grate, as someone else in this forum alluded to, it'll take as long as it takes.
 
Like Eugene said, it'll take as long as it takes. But more often then not a little bit longer and sometime a whole lot longer, but never less longer then it takes.
