I have been cooking still, nothing really fancy to be honest and I haven’t been posting much.
Just a few pics of some of the yummy stuff lately.
I may have posted the brined and smoked salmon and crab cakes.
I did a picanha next cook.

Late last week I made som Oakridge Jah love jerk drumsticks with southern style rice.
That rub there sure is hot, if you haven’t had it and like spice you should look into it.

Cubano coming up real soon, cooked the pork early.....it’s cooling now for great slicing.
Pulled it with the sear at 142......covered to rest, didn’t take a final temp but probably not over 147.
Used some peach wood for flavour, I pretty much use peach on every cook unless it’s the E6 and it a pulled pork or a brisket or similar. The peach burns nice, it’s a light smoke and keeps me who likes smoke and the MRS who likes it but not strong happy....

Tasty as always...we make these about once a month. Lean pork roast goes on sale very often. I can get a 2.5 pound nice roasts all trimmed and ready tog o for under 10 bucks......I freeze many, it’s hard to make good bbq for cheap anymore, it’s very lean meat so it’s not the best but it has its uses.
That sauce is a real tangy mustard cut with a bit of polish mayo.....makes a real good sauce, it’s my mustard layer on the sandwich.
