Raining Again Dang it Deep Dish Pizza

After seeing the deep dish pizzas of John Soak and Nate Frost using CI fry pans I just had to go for it.
Barb and I made two deep dish and one thin crust.
For the deep dish we used a recipe for the dough that I’ve used for deep dish pizzas for years and Barb made her thin crust dough for the other.

For the stuffing and topping we used my homemade pizza sauce and the following:
Mild Italian sausage
Red, green, yellow bells
Green onion
Yellow onion
Pepperoni
Mozzarella
Parmesan
Provolone
Mexican blend cheese for a little color on top
Black olives
Fresh basil
Fresh oregano

The pictures will tell the rest, had to use the gasser for this cook as there was a lot of lightening and rain and with the performer being next to a tree and out in the open I didn’t want to become a crispy critter and took the safe way out.

All three came out great and the deep dish was the best I’ve ever made, we will be doing DD this way from now on.

Edit: upon seeing this, and not having anything planned for dinner, I ran to the store and picked up some dough and fixins. I'll be making one shortly. Thanks for the motivation!

Question: I'll be using a 12" cast iron skillet. Anyone have suggestions for cook temp/time? Thanks!!

Jim, Ran the gasser about 375 + - indirect, cooked 20 min and turned the pans then about 25-30 minuets more. But we were using 10 inch pans so you may have to adjust a little for a 12 inch.
 
I do ----- Hot (350 minimum ha ha) and until it's done.

Thanks guys. I'm going with the oven for this one, and its at 375. I figure it'll take 40 minutes or so. I'm excited to try this - only been in 10 minutes and it smells good already!
 
Great looking Pizzas Rich and Barb. I'd sure take a little of that rain, not the lightning though. How do you like that wooden peel?

We really like it. The peel makes it so much easier to get the pizza in and out of the oven or grill. We got that one at Bed Bath & Beyond.
