In a large skilltet cooked up about 3/4lb pork chorizo and a small chopped onion.


In a smaller skillet I added a layer of the cooked chorizo, shredded Oaxaca cheese, another layer of chorizo, Oaxaca cheese, and some chopped and cleaned Hatch chiles I had in the freezer


Cooked indirect for 30 minutes


Spooned some of the mixture on some small tortillas that were warmed on the grill
 
I only had one bite to try it! My wife and I had dinner already but I wanted to cook this before the ingredients went bad thinking I'll take some of it to work today for lunch. No such luck, the rest of the family woofed it all down.
