Pulled Pork Enchiladas

Well this was the last of the Pulled Pork
Made Tostados, Nachos, & Enchiladas
Made a Roux then an Enchilada Sauce
Dipped each Corn Tortilla in the Sauce & filled with Pulled Pork & Cheese. Made about 5 & placed in Casserole Dish. Poured more Sauce over them & topped with Cheese & Onions. Made Spanish Rice & served with Homemade Pico de Gallo
