Pulled Pork Enchiladas

TVWBB 1-Star Olympian
Made some Pulled pork last night and used some of it to make some enchiladas for tonight's dinner.

Pulled pork swimming in some enchilada sauce


Heated some tortillas and stuffed them with some on the pork and topped them all off with the remaining sauce.


Topped with cheese


On the grill for 30 minutes covered and another 15 minutes uncovered


Topped with sour cream, lettuce, tomato, and Sriracha sauce
 
John, those enchiladas look delicious!

Thanks for the idea. Since I am single now, I end up with a lot of leftovers to try and figure out what to do with. Enchiladas would be perfect.
 
Those look great John, Barb and I make those a lot and freeze a few trays to use when we get lazy and just want to heat and eat. Good stuff.
 
Looks great! That's one of my favorite uses for leftover pulled pork. That and tamales that is.
 
John that is an awesome way to use leftover pulled pork. They look fantastic and I'm sure they tasted that way too.
