PSB and Pig Shots

My wife asked for PSB this weekend, so PSB it is! A friend told me about pig shots and sent me some pics. They looked good so I gave them a try..
Chuck roast doin it's thing on the 18.5

Peppers, jalapeños, garlic and Guinness waiting patiently..

A match made in Heaven!

While the roast cooks on the smoker, I prepared the pig shots


Shots on the bottom rack for an hour

Finished products

No finished shots of the PSB, we had some friends over and it didn't last long enough for a pic! The pig shots were a huge hit, a definite go to appetizer in the future!

John, the PSB was a hit as usual! Of all the things I Q, it's my wife's favorite. Our friends had never had it, and they loved it as well!
JimK, it's cream cheese in the middle, topped with a dash of your favorite rub. Our friends have already requested a double batch for when we get together for the race Sunday afternoon!
