Pork rib roast

Picked up a pork roast with rib bones in it. Frenched bones and trimmed up and decide either chops or rotisserie. Spinning the pork, using Jealous devil and 1 piece of cherry. 4 pounds and making a potato cheesy dish to go with it. Some pics here just about done here, sitting at 130 on the pork and the potatoes are getting close. I don’t have much rubs for pork and just went with Oakridge competition.
It’s looking good, final pics to come, I’m thinking about a double chop tonight. Looking for 145 or so, hopefully pink still.

From my place the french means to cut the meat off the bones,
My next province over...or state for you is french......it’s kind of weird too.
 
I pulled at 142....my mistake, was about 5 or so over cooked.
Juicy and tasty for sure.....how are the ribs!

I love anything cheesy tell us more about the potatoes
These are to die for and extra healthy…….I was hoping for fat free but not so much.
2 pounds potato, I use frozen hash brown, using them frozen is good.
16oz of sour creme
a bit of finely diced onion
1 can cream of chicken soup, can use mushroom instead
2 to 2.5 cups of shredded cheese.
salt, pepper.
1/2 cup of melted butter.
things that can go in too are…..
ranch or bacon or both.
finish with crispy onion….make your own or use french’s.
Mix all together well and put in an appropriate size pan. Don’t mix the french’s onions in, they are for the end.
I bake at 400, lid in till the edges start to get crispy then take the lid off
Once it starts to brown up a bit I broil at 425 for a few then top with the crispy onions and broil a few more
I added parmigiana with the onions.
the pics tell the story……it’s hard to eat just a bit.

thank god this is the healthy version. i couldn't imagine what the unhealthy version looks like 💔

so it’s healthy and safe for all to try.
I have lots left over
thinking about taking containers to work. They have learned not to ask questions. They always eat what I give them.
just say, cheesy hash brown potatoes and it’s gone.
I have tons of pork left too…..
