Well, slap my butt and call me hungry! That looks great! Will withhold washing my face for a few minutes waiting for the drool to end...again!
 
What interesting cut of meat, it was like eating ribs and pork loin at the same time.

That turned out great, Bruno. I love rack of pork for just the reason you stated. You get a nice pork chop, a baby back rib, and.....if your butcher trimmed it right, all with a nicely crisped layer of pork fat! :)

Sprouts look great too!
