From a pig we bought local last year.
I'll slice it tomorrow after a overnight rest in fridge.
Used 1 chunk of hickory and sugar maple.

Pork jowl looks delicious. Will you be making a sandwich or eating it with breakfast?

Scraps and end pieces work well with dried beans.

All sliced. I have a head of cabbage I'll chop up and sauté with jowl bacon🥓 and onions.

Cliff I diced up a few pieces for your drunken Frijoles.
