Pork Chops, Baked Potato and Eggplant

This was my Thanksgiving Eve cook. Bone in pork chops, baked potatoes and Eggplant on the grill.

Chops seasoned with salt and pepper only.



Got the Russets on an hour or so before dinner.



My wife loves Eggplant and I hadn't done it in a while so I picked one up.



Sliced it up, about 1/2 inch slices. Seasoned each side with Olive Oil and K Salt.

Put them on with the chops. Took about the same amount of time, 3 minutes a side.

Flip.



Pulled the Eggplant and gave the chops another minute or so.



All done. Plate.







Nice, easy cook. The pork chops were moist and had wonderful flavor. The Eggplant was delicious too. Very satisfied with this cook. See you all tomorrow on the big day. Thanks for looking.

Looks good Cliff. I always thought eggplant needed to cook longer than that, guess I was wrong. I am going to have to give it a try on the grill.
 
Nice job - everything looks great Cliff! I will have to try your eggplant recipe - I am not a fan but my wife loves them...
