Whew! What a crazy and fun night of cooking. Two grills going, stuff on the stove and it all came together beautifully. Wanted to make some pork tacos. Researched it extensively on this site, on the web and on you tube. Turns out my best resource was Tony R for most of the meal. Thank you for your educational posts Tony!
Here are the ingredients
Started by getting the pork started in a CI Dutch oven.
Covered and cooked for two hours
Started the salsa verde (thank you Tony). Bought the jalapeños but the pablano and Anaheim was from my garden. First time for me cooking tomatillos.
Finished grilling the ingredients and put them in a blender to make the salsa. Not a great pic but the salsa was really good.
After two hours took the lid off the Dutch oven and cooked open for another two hours
Meanwhile Kim made Pico, Guacamole and Tony's Spanish rice recipe. And yes, before I get the questions, she did change into some more comfortable clothes.
