Had plans for doing some pizzas last night without even knowing it was National Pizza Day!

It was not National Negroni Day but what the heck!4C21E414-A1BE-478D-9248-AE6521C7A5F6.jpegIt was our first day in the 60’s here so thought it would be a good night to try to get some high heat 🔥on Performer!0F0C1912-6ABA-4256-9AA4-5B02598DE653.jpegHad to work a little harder to get temps up to 550+ as the night chilled but with a nice rotation of the pies near the flame we got a nice crisp on the edges of the crust!7FBF40EF-F5C1-446A-84A0-0E150FB75ADD.jpegPies were fantastic as was the wine 🍷 from Puglia, Italy 🇮🇹!DD05F17A-383E-43C0-A6FB-46AB1A0DA18F.jpeg2F6DC0B7-4AC3-4BAA-B8BC-C6EFC84578BC.jpeg3BFFEB80-BD75-4F5D-859D-B7BDE026F6CC.jpeg

Nice! I'd like to hear about the technique. What cooker is that? Did you put the lid over it? I need to get into the pizza thing with my Weber and I'd like to do it without a pizza oven accessory.

I did it on my Performer. There is a lot of info on this site (Rich G) and YouTube on doing pizza on a kettle. Most of the success stories combine using a lot of fuel and raising the pizza stone off the grate a bit.
I like to add a few large chunks of apple wood that give a good flame 🔥 and then rotate the pie near the flame to get a good crisp.
When the lid is on it is just partly on to make sure the temps stay high.
These pies took about 8-10 minutes.
