Had plans for doing some pizzas last night without even knowing it was National Pizza Day!
It was not National Negroni Day but what the heck!
It was our first day in the 60’s here so thought it would be a good night to try to get some high heat
on Performer!
Had to work a little harder to get temps up to 550+ as the night chilled but with a nice rotation of the pies near the flame we got a nice crisp on the edges of the crust!
Pies were fantastic as was the wine
