Pesto glazed stuffed cx breast with CIS chickpea/tomato salad

Hey yinz guys!

Stuffed some real nice cx brst (marinated in balsamic viniagrette) with combo of jalapeño/roasted red pepper/ sun dried tomato/ mozzarella ch





Quick sear then indirect to finish on the ole summit



Got some grape tomato (used the 2 plate method to slice and was pretty nifty)



Added cumin, garlic salt, weber kickin cx and can chickpeas



Chicken on da flip and basted with some store bought pesto





Added fresh cilantro at end to CP/tomato



Plated up, tender and moist! Wow this was good! Haven't made the cx in a long time but is on short list to do again!
