Picked up some nice Atlantic Salmon for me and the CEO tonight
My fish monger also gave me the two gill plates which he said has some nice medallions in them to smoke. A little Wegmans Basting Oil some dried Thyme and a little brown sugar. Some Lemon Zest too
Meanwhile I prepared two medium Leeks as per Jac Pepin and chopped them up nice and in the saute pan with some EVOO S&P
One quart of Chicken Stock, bring to a simmer for a few minutes then add 1 cup of flaked instant potatoes stirring constantly. When all mixed and tender with the leeks I added half a can of condensed milk, you can use regular whole milk too.
On a soaked cedar plank in the OTG with a chunk of Applewood and tonights Beer. Good stuff
Done and heading in
Took the thinner pieces of salmon and trimmed them for Hord'ovres with a slice of apple a little Dill and a little EVOO and a slice of olive.
On the table with a good Sauvignon Blanc and some artisinal rosemary bread. Some Lobster Ravioli as a side.
A nice meal celebrating the first night the CEO and I are childless for months. Catch you later
