I've had this recipe earmarked for a couple of weeks and finally got to it. Peking-Style Short Rib Tacos. Picked up about 4 lbs. of flanken style beef short ribs. Marinated them for about 3 1/2 hours and then grilled them. Used Hoisin Sauce with the meat when building the tacos. I know that refried beans doesn't pair well with and Asian inspired taco but the tacos were really sweet and I wanted a little spice to offset the sweetness. Tony's beans did the trick.
The ribs.

The marinade consisted of grated yellow onion, soy sauce, grated fresh ginger, sugar, grated garlic.

In a two gallon zip lock for around 3 hours. Will do overnight next time.

Grilled some sliced yellow squash for the tacos. I did two ears of corn for my wife that she needs for one of her recipes.

Taco ingredients. Julienned cucumbers, the grilled yellow squash, red and green jalapenos, and scallions.

Ribs out of marinade.

On the grill. Had to do in batches.

Second batch.

Got a little hectic at this point and didn't get picture of ribs when done at around the 5:00 minute mark. Pulled the ribs, let cool and cut the meat off the bones. Sorry.
While the meat was resting, made the beans. No words necessary for Tony's beans.
