
In 1997, I had owned my WSM for just a few weeks when I heard that Paul Kirk, an award-winning BBQ competitor, was coming all the way from Kansas City to teach a barbecue class just down the street from where I worked in Los Altos, CA. The class was organized by Frank Boyer and the California BBQ Association and we cooked the four competition meats and had a mock judging all in a single day...a very long day! I had never touched, much less cooked, a whole brisket or pork butt until that class and I learned so much that day.
Congratulations to Paul Kirk on being named to the Barbecue Hall of Fame Class of 2015.
Paul Kirk, known in many circles as the Kansas City Baron of Barbecue, has won more than 475 cooking and barbecue awards, including seven World Championships. His storied barbecue career is highlighted by his victory at the American Royal World Series of Barbecue® Invitational Contest in 1991.
