Well another Superbowl has come around and I am back on my Paleo diet. I had decided just to punt the diet for game day but thought better of it and challenged myself to make game snacks that would require me to cheat. So I dusted off the Paleo Five Sauce recipe my wife and I put together last year and did some BBQ wings on the OTG. I also whipped up a batch of traditional Buffalo Sauce I also smoked a couple of chicken breasts in the WhoDat Mini and turned those into pulled chicken which was made into nacho topping. Nachos chips are not paleo so I made a batch with regular tortilla chips and another batch with pork rinds. Here are a few pics of the proceedings:

Chicken Breast - Apple Smoke to Internal of 165 - Pulled & Subsequently Blended into Homemade Taco Seasoning

Nachos Two Ways Staged for Service - Pork Rinds & Mexican Blend Cheese on the Left - Tortilla Chips and Pepper Jack Cheese on the Right

Your Paleo Plate
Well this turned out great. The wings were juicy (I dry brined the them) and both sauces were paleo friendly. the nachos turned out pretty good too. The pork rinds make a good medium for nachos and give the dish more texture. The apple smoke was completely overpowered by the seasonings in the taco sauce. Next time I do this I will use hickory or perhaps mesquite to amp up the flavor profile a bit. Thanks for looking - enjoy the game...
