That picture made my mouth water / gave me an appetite for some Paella!
A few years ago - one member posted made his version on some sort of steel / iron "disk" (it started life as a heavy component of a Disc Harrow farm implement, and had the edges rolled to form a shallow but HEAVY pan, with handles added - the heavy metal really allowed him to get a nice "crust" around the edges where the rice caramelizes / dries-out with the juices)
Now that I've got a Performer - I need to get a suitable pan and give this a whirl
