Onion Mushroom Swiss Elk Burgers

1/3 lb. Elk Burgers on a carbon steel Comal after the flip, lovin' that crust!!


Sauteed some onions and mushrooms and cooked some more sweet peppers too.


Onions and mushrooms piled high and deep atop the burgers


Melted a slice of Swiss Cheese on top of each

Superb Burgers John! How do you like the elk taste? Been a while since I've had it...
also been looking for a comal but haven't found one as nice as the one you use...
bought one on-line but it was cheap, donated the dang thing to GW
 
Excellent looking plate of food! I am also interested in the taste of the elk burger.

My uncle gave me a box of elk meat around 7-10 years ago.... it was lean and rich, not gamey at all. I'm a better cook now, I'd sure like to harvest an animal!
 
Never tasted a Swiss elk! But i sure hope they taste better then the Swedish ones :p

The men in the Lewis and Clark expedition preferred elk to all other meat. Each man ate up to 10 lbs. of it per day! They were working hard and burning some serious calories.
