Felt like cooking dinner in the Dutch oven. The family said they wanted chicken so I assembled the ingredients.
Started by roasting some red peppers over some Kingsford.
Kim dredged the chicken in seasoned flour
Kim and I chopped the vegetables. That's Kim.
Fried the chicken in batches.
Added butter, onion, carrot, celery and a little later garlic to the pot after the chicken was fried.
Added wine, tomato paste,roasted pepper strips, chicken stock, mushrooms and the browned chicken. I let this braise for awhile.
Added a couple of cups of rice and cooked about 40 more minutes.
Brought the pot into the house and let rest. Then plated with a few slices of baguette.
Although it doesn't look all that appealing I have to tell ya that the flavors were outstanding. Everyone ate plenty and there were lots of leftovers which reheat nicely. Thanks for looking!
